What is the torque setting for the steering head bearings for my 07 GSXR 600

The torque setting must be set as per manual instructions. As the steering head wears and if not maintained, that torque will increase as the bearing race changes shape over time. These bearing should be cleaned annually and checked frequently if you are stunting or practicing wheelies.

Does each track you visit require unique tire pressures? If so, why? Not a simple answer as race tires have set pressures, but street/track designed tires can have differing pressures based on how you ride and the ambient and track temps that day.
